Abstract The viscera and other residues from fish processing are commonly discarded by the fishing industry. These by-products can be a source of digestive enzymes with industrial biotechnological potential. In this study, we aimed at extraction, characterization, application acidic proteases stomach Carangoides bartholomaei (Cuvier, 1833). A crude extract stomachs was obtained submitted to partial purification process salting-out, which Purified Extract (PE) specific proteolytic activity 54.0 U⋅mg-1. 1.9 fold yield 41% were obtained. PE presents two isoforms maximum 45 °C pH 2.0. stable in range 1.5 7.0 temperature 25 50 °C. kept 35% its presence NaCl 15% (m/v) but totally inhibited pepstatin A. aspartic presented high heavy metals such as Cd2+, Hg2+, Pb2+, Al3+, Cu2+. utilization an enzymatic addictive collagen extraction Nile tilapia scales has doubled yield. results indicate potential these for applications.
